Kuzhi Paniyaram using idli/dosa batter


This is a very easy recipe for breakfast and good one for your kids snack box. I pack this every alternate day for my kid to her kindergarden. She can easily pick it up and eat it without any mess and it is healthy too.

Note: You need to have a paniyaram pan for making this.




Ingredients
  • Idli/dosa batter - 1 cup
  • Onion (chopped finely) - 1 tablespoon
  • Mustard seeds - 1/2 teaspoon
  • Oil - 1 teaspoon
  • Green chilli (chopped finely) - 1 (optional)
  • Ginger ( chopped finely) - 1/2 inch piece
  • Curry leaves cut finely - 1 sprig

Preparation
  • Heat oil in a pan and add mustard seeds.Let it splutter.
  • Add onion , green chilli , ginger and half of the cut curry leaves and sauté them well.
  • Once the onion becomes transparent , add the mixture to the batter and mix well.
  • Add the remaining curry leaves and mix the batter.

  • Heat the paniyaram pan in the stove and add tiny amount of oil in each hole.
  • Using a small spoon, add up to 3/4 th full of batter in each hole. Close the pan and let it cook for 3 to 4 minutes. 

  • Remove the lid and turn over the paniyarams and let cook for another couple of minutes without closing the lid.
  • Remove from the pan and store in a hot pack.
  • Serve hot with coconut chutney or any chutney of your choice.
