Morning Glory Muffins (Breakfast Muffins)


Morning Glory Muffins - This easy and tasty muffin is the perfect way to start your day. This has everything that is required for a great start like carrots, apples and nuts. This is also great snack for the road trips to eat in the car.



Ingredients:
  • All purpose flour - 1 and 1/3 cups
  • Granulated white sugar - 3/4 cup
  • Baking soda - 1/2 teaspoon
  • Baking Powder - 1 teaspoon
  • salt - 1/4 teaspoon
  • Toasted and chopped walnuts - 1/4 cup
  • Eggs - 2
  • Vanilla extract - 1/2 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Apple (Peeled and grated) - 1 (1 cup)
  • Carrots ( Peeled and grated) - 3 ( 1 cup)
  • Vegetable oil - 1/2 cup

Note:
  • Make sure the eggs are at room temperature
  • Pre heat the oven to 350 degrees F
  • Place the rack in the middle of the oven.
  • This recipe makes around 12 muffins.
  • Very important point to note is that you should NOT over mix the batter.

Preparation:
  • This recipe is very easy and needs just two bowls and no electric mixer. 
  • Buttter the muffin pan or place paper cups in the pan.
  • In one bowl, mix together flour, sugar, baking powder, baking soda, salt and cinnamon powder and nuts.
  • Whisk the mixture thoroughly to make sure the baking powder gets mixed properly.
  • In another bowl, whisk together the eggs, oil and vanilla extract.
  • Add the egg mixture in the flour mixture and mix just a little till the flour becomes moistened. Make "very very" sure you do not over mix.
  • Now add the apple and carrot and stir it just once or twice.

  • Fill up the muffin cups almost till top and bake for 20 to 25 minutes.


  • Check for doneness using the toothpick test.
  • Once done, let it cool in the pan for 5 minutes and then cool them completely on a wire rack.
  • Enjoy it for breakfast with a cup of coffee/tea or as a mid morning or evening snack.
