Beet Greens Dal

Beet Greens Dal - This is a nutritious and healthy dal and it goes well with roti or rice. I love to see the fresh tender beetroot along with their long green leaves in the markets in U.S. It looks so fresh and healthy.

Fresh cut beet greens

Long back, I used to throw away the greens and use only the beetroot as I have not seen or used the Beet leaves for cooking, in India. But later on , after starting to see food network channel and seeing the chefs making lots of dishes with beet greens, I started cooking them too. I made the beet green dal almost similar to palak dal. It is so comforting to have this dal with rice/roti, knowing that you are having, one healthy and tasty dish :)

Ingredients:

Beet Greens - 1 bunch
Onion - 1 ( chopped into small pieces)
Ginger Garlic Paste - 1 teaspoon
Turmeric Powder - 1/2 teaspoon
Garam Masala Powder - 1 teaspoon
Salt - As per taste
Oil - 2 tablespoons
Jeera (Cumin seeds) - 1 teaspoon
Geen chillies - 2 (split lenghtwise)

Preparation:

  • Add oil in a heated pan.
  • Once the oil is heated, add jeera and let it splutter
  • Add cut onions and green chillies

  • Add turmeric powder and ginger garlic paste and saute it well.
  • Add beet greens and stir for a minute till it wilts.
  • Add garam masala and give it a stir.
  • Add dal and 2 cups of water.
