Pakoda/Pakora - However we call it, nothing can beat it with a hot cup of tea during rainy days. Well, on second thoughts, not exactly nothing. I also love raw banana (vazhakkai) bajji with hot tea during rainy days :) . Though onion pakoda is more common in our households, I am posting a healthier version of the pakoda - Palak pakoda or spinach fritters.
Ingredients:
Gram flour - 1 cup
Rice flour - 2 tablespoons
chopped spinach - 2 cups (packed)
ginger garlic paste - 1/2 teaspoon
salt - as per taste
chilli powder - 1 teaspoon
cumin powder - 1/2 teaspoon
asafoetida - 1/4 teaspoon
hot oil - 2 tablespoons
Preparation
- Add all the dry ingredients together in a bowl and mix it well.
- Add spinach leaves to the dry ingredients and add hot oil.
- Mix well. Sprinkle one tablespoon water and mix it. Sprinkle water little by little and mix it till the batter just coats the spinach leaves. It should be a stiff batter as in the picture.
- Heat oil in a pan. Once the oil is very hot, keep the flame in medium and then drop the batter using a spoon little by little.
- Deep fry them till it becomes a golden brown color.
- Remove from the oil and place them in a paper napkin.
- Serve them hot with tea.
- If desired, you can use tomato ketchup in the side.
