Bhindi Masala

Bhindi is one of the favorite vegetables for my kid.She loves it and can easily finish off the whole sabzi all by herself :) ..  I like to see her liking and eating most of the healthy vegetables. I remember my mom used to compel us to eat bhindi as it is supposed to increase our mathematical skills. :)



Ingredients:
Bhindi (Okra) - 250 gms
Onion - 2 big
Ginger and garlic paste - 1 teaspoon
Tomato - 1 big
Cumin seeds - 1 teaspoon
Chilli Powder - 1 teaspoon
Garam masala - 1/2 teaspoon
Cumin Powder - 1 teaspoon
Turmeric Powder - 1/4 teaspoon
Amchur Powder - 1/2 teaspoon
Salt - As per taste
Oil - Around 2 tablespoons
Chopped coriander leaves - 1 tablespoon

Preparation:
Wash and wipe the bhindi with a paper towel.
Cut bhindi into 1 inch pieces.


Add one teaspoon oil in a kadai and roast the bhindi pieces.
Let them roast well for around 10 minutes in low flame.
Toss them once in a while.
Once they are roasted well, transfer them to a plate and keep it aside.
In a kadai, add 1 tablespoon oil and heat it.
Add cumin seeds and then onion.
Fry the onion till they become light brown in color.
Add ginger garlic paste and fry a little.
Add tomatoes and fry for few seconds.
Then add all the dry powders.Start with salt and red chilly powder, then add garam masala, cumin powder, amchur powder and stir well till the raw smell of the powders is gone.

Once the onion tomato mixture is fried well, add the roasted bhindi. You will know the doneness of the onion tomato paste by seeing the oil oozing out from the sides. Taste and add salt if required.


Mix the bhindi with the gravy well and let it cook for couple of minutes.
Transfer it to a serving dish and garnish it with chopped coriander leaves.

This goes well with chapati/phulka/Roti/Naan.
