Ingredients:
Oil - 3 tablespoons
Onion(chopped into small pieces) - 2 (big)
Green chillies(slit lengthwise) - 3
Ginger and garlic paste - 1 teaspoon
Chilli powder - 1 teaspoon
Coriander Powder - 2 teaspoons
Garam Masala - 1/2 teaspoon
Tomatoes(chopped into small pieces) - 2 small
Eggs - 4
Potatoes(Boiled) - 1
Coriander leaves(chopped) - 1 tablespoon
Salt - as per taste
Preparation:
- Hard boil the eggs and cut each into two halves.
- Heat the pan with 3 tablespoons oil.
- Add the cut onions and fry it till golden brown
- Add green chillies, ginger and garlic paste and fry for few minutes
- Add chili powder, coriander powder and garam masala and fry till the raw smell goes off.
- Add tomatoes and let it cook till it becomes a paste.
- Cut the boiled potato into bite sized pieces and add to the paste.Fry it for couple of minutes and add water and salt.
- Let the gravy simmer for around 10 to 15 minutes till it thickens a little.
- Once the gravy is completely done, add the cut egg halves into the gravy and let it boil for another 5 minutes.
- Switch off the flame and let it rest for 10 minutes.
- While serving garnish with chopped coriander leaves and serve it with rice / chapati.
