Egg Curry / Egg Masala




Ingredients:

Oil - 3 tablespoons
Onion(chopped into small pieces) - 2 (big)
Green chillies(slit lengthwise) - 3
Ginger and garlic paste - 1 teaspoon
Chilli powder - 1 teaspoon
Coriander Powder - 2 teaspoons
Garam Masala - 1/2 teaspoon
Tomatoes(chopped into small pieces) - 2 small
Eggs - 4
Potatoes(Boiled) - 1
Coriander leaves(chopped) - 1 tablespoon
Salt - as per taste

Preparation:
  • Hard boil the eggs and cut each into two halves.
  • Heat the pan with 3 tablespoons oil.
  • Add the cut onions and fry it till golden brown
  • Add green chillies, ginger and garlic paste and fry for few minutes
  • Add chili powder, coriander powder and garam masala and fry till the raw smell goes off.
  • Add tomatoes and let it cook till it becomes a paste.

  • Cut the boiled potato into bite sized pieces and add to the paste.Fry it for couple of minutes and add water and salt.
  • Let the gravy simmer for around 10 to 15 minutes till it thickens a little.

  • Once the gravy is completely done, add the cut egg halves into the gravy and let it boil for another 5 minutes.
  • Switch off the flame and let it rest for 10 minutes.
  • While serving garnish with chopped coriander leaves and serve it with rice / chapati.
