Rava Ladoo

Rava ladoos are so so easy to make. At the same time, it is a really delicious melt in mouth sweet. I love this and the south indian soan papdi very very much from the time I was a small kid. Rava ladoo can be done in two ways. One version is with rava , sugar and ghee and ONLY ghee :) . The other version uses milk instead of too much ghee and goes little easy on the stomach and it is very delicious too. Make sure that the coconut is grated very finely for the correct texture of the rava ladoo.



Ingredients:
  • Semolina/Sooji/Rava - 1 cup
  • sugar - 3/4 cup
  • grated coconut - 1/2 cup
  • cardamom powder - 1/2 teaspoon
  • cashew nut - 10
  • raisins - 10
  • Ghee - 2 tablespoon
  • Milk - 1/4 cup
Preparation:
  • Roast the rava in one tablespoon of ghee till a nice aroma  comes. Keep it aside.
  • Powder the sugar.
  • Roast the cashews and raisins in one tablespoon of ghee.
  • Once the cashews and raisins are roasted, add the grated coconut and roast it for around 3 minutes. Do not wait till coconut becomes brown.

  • Now, add the rava, sugar and cardamom powder and roast for few more minutes (around 5 minutes in low flame).
  • Switch off the flame and add milk little by little and mix it well.
  • When the ladoo mix is warm enough to handle by hands, make them into small lemon sized balls.

  • Set them aside to cool down.
  • You can make around 15 rava ladoos with this recipe.
