Ingredients
1. Potato boiled and mashed - 2
2. Mustard seeds - 1/4 teaspoon
3. finely chopped onion - 1 tablespoon
4. ginger - 1 small piece (chopped)
5. coriander leaves - 1 tablespoon (chopped)
6. salt to taste
7. green chillies - 1 (finely chopped)
8. turmeric powder - a pinch
9. Oil
Ingredients for the batter:
1. Gram flour (Besan) - 1 cup
2. Red chilli powder - To taste
3. Asafoetida - a pinch
4. salt to taste
5. Roasted jeera powder - 1/4 teaspoon
6. Baking soda - a pinch
7. water
Preparation:
1. Sieve the gram flour. Add the all the ingredients listed for the batter except water and mix them.
2. Add water little by little and make a medium thick paste.
3. Make sure the paste is neither too thin nor too thick.It should be of idly batter thickness.
4. Add little oil to a pan and add mustard seeds.Once the mustard splutters, add onion,ginger,green chillies and stir them for few seconds.
5. Add the mashed potatoes,salt and turmeric powder. Mix them thoroughly.Add the coriander leaves.
6. Let it cool and make small balls as per the size that you want the bondas to be. I like small bite sized ones.
7. Keep a pan on the stove and add oil for frying. The more the oil, the better. These balls should be immersed in the oil while frying.Let the oil get heated well.Once the oil is heated well, keep the flame in medium.
8. Take the balls one by one and dip in the batter fully so that the batter is coated fully on the balls. Slide them into the hot oil. Let it cook in the hot oil. Take it out once it is golden brown in color.
9. Serve it hot with chutney of your choice (coconut chutney or coriander /mint chutney).
