Poha (Flattened Rice Upma)


Ingredients

  • Thick Poha - 2 cups
  • Onions (medium sized) - 2
  • Green chillies - 2 (slit lengthwise)
  • Peanuts - 2 full tablespoons
  • Peas - 1 tablespoon(optional)
  • Mustard - 1/2 teaspoon
  • Curry leaves - 1 sprig
  • Oil - 1 tablespoon
  • Salt - as per taste
  • Turmeric Powder - 1/4 teaspoon
  • Lemon Juice - 2 tablespoons
  • Coriander leaves(chopped finely) - 1 tablespoon


Preparation

  • Rinse the poha twice or thrice in running water.
  • Keep it moist with very little water for around 10 minutes.
  • In the meantime, heat oil in a pan and splutter mustard seeds.
  • Add onions, green chillies and sauté them till onions turn transparent.
  • Add peanuts and peas and roast them well.

  • Add curry leaves and turmeric powder and salt.
  • Now make sure the poha has absorbed the water fully and separate.It should not become mushy.
  • Add the moist poha and stir well till the poha is heated through.
  • Once done, Put off the flame and add lemon juice and mix it well and sprinkle the coriander leaves.
  • Serve hot.


Note: In typical poha recipe, boiled potatoes are added. But I did not add it since I wanted it to be quick. I had added some microwaved frozen peas for extra nutrition.
