Healthy Carrot Cake -Whole Wheat



Ingredients:

  • Whole wheat flour - 1 cup
  • Roasted and chopped walnuts - 1/2 cup
  • Grated carrots - 1 cup
  • Granulated sugar - 3/4 cup
  • Vegetable oil or any cooking oil - 1/2 cup
  • Baking powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Cinnamon powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Eggs - 2
  • Vanilla Essence - 1 teaspoon


Preparation:

  • Pre heat the oven to 180 degree C.
  • Butter and line a 8 inch or 9 inch cake pan with a wax paper.
  • Mix flour, baking powder, baking soda,salt,cinnamon powder in a bowl thoroughly.
  • Beat the eggs in another bowl using an electric mixer till they become light and fluffy.
  • Add sugar and beat it well for about 3 minutes.
  • Pour the oil in a steady slow stream and keep on beating the mixture.
  • Add vanilla essence and beat once more.
  • Now add the flour mixture to this liquid mixture and beat it just till it is mixed.
  • Add the walnuts and carrots and mix them together with a spatula.
  • Do not overmix.
  • Pour this mixture to the cake pan and bake it for about 40 minutes or till a toothpick inserted in the centre comes clean.
  • If the cake is browning too much, cover the pan with an aluminium foil and bake it.
  • Healthy and tasty carrot cake is ready to eat. We do not need any icing for this cake. It is yummy as it is.
