Ingredients:
- Whole wheat flour - 1 cup
- Roasted and chopped walnuts - 1/2 cup
- Grated carrots - 1 cup
- Granulated sugar - 3/4 cup
- Vegetable oil or any cooking oil - 1/2 cup
- Baking powder - 1/2 teaspoon
- Baking soda - 1/2 teaspoon
- Cinnamon powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Eggs - 2
- Vanilla Essence - 1 teaspoon
Preparation:
- Pre heat the oven to 180 degree C.
- Butter and line a 8 inch or 9 inch cake pan with a wax paper.
- Mix flour, baking powder, baking soda,salt,cinnamon powder in a bowl thoroughly.
- Beat the eggs in another bowl using an electric mixer till they become light and fluffy.
- Add sugar and beat it well for about 3 minutes.
- Pour the oil in a steady slow stream and keep on beating the mixture.
- Add vanilla essence and beat once more.
- Now add the flour mixture to this liquid mixture and beat it just till it is mixed.
- Add the walnuts and carrots and mix them together with a spatula.
- Do not overmix.
- Pour this mixture to the cake pan and bake it for about 40 minutes or till a toothpick inserted in the centre comes clean.
- If the cake is browning too much, cover the pan with an aluminium foil and bake it.
- Healthy and tasty carrot cake is ready to eat. We do not need any icing for this cake. It is yummy as it is.
