Roasted Pumpkin Soup





Oh! I can see that! Do not make your face like that :-) . This is really a very good soup for those who are on a diet plan. It is very easy to make and very nutritious. I agree it will be a little bland.

Two points you should note before trying this soup. 1. You should like the taste of pumpkin and 2. You should really like the taste of pumpkin. :-)
For spice lovers, add a little red chilly powder when you roast the pumpkin.

Ingredients
  • Peeled and cut pumpkin pieces - 1 cup
  • Onion - 1 (Peeled and diced)
  • Garlic - 1 pod
  • salt - to taste
  • pepper - to taste
  • Olive Oil - 1 teaspoon
  • Water or vegetable stock - 1 cup


Preparation:
  • Add olive oil in a heated saucepan.
  • Add onion and garlic and roast them a little. Then add pumpkin pieces to it and little salt.

  • Roast all ingredients well, till the pumpkin becomes tender and roasted well.

  • Add half cup of water and cook till the water boils.

  • Cool it and puree it in a blender and transfer it to the saucepan again.
  • Depending on the thickness of the soup, add more water and simmer it for 5 minutes.
  • Season with salt and pepper.


Note: Add lots of pepper and if needed, add some red chilli flakes, as it will be a little bland.
