Puttu (Steamed Rice logs)


Ingredients:
  • Rice Flour / Red Rice Flour - 2 cups
  • Warm water - 1/2 to 3/4 cup
  • salt - as per taste
  • Grated coconut - 1/2 cup

Preparation:
  • Take the rice flour in a vessel and mix it with salt.
  • Add warm water little at a time and mix it well with your finger tips.
  • To check the correct consistency, take a little flour in your hands and press it , it should hold the shape.But, when you press it with your fingers , it should crumble again.

  • A special vessel called Puttu maker (!!) is needed to make this.
  • There are couple of varieties of this puttu maker. If you don’t have one, buy one that can be fitted to the pressure cooker. It is easy to use.
  • Add 2 tablespoons of the grated coconut at the bottom of the mould.Then add the prepared flour till half-way.
  • Add another layer of grated coconut.Fill the rest of the mould with the flour.Top it up with another layer of coconut.
  • Take around 3 cups of water in the cooker and close the lid.Once the steam starts to come,fit the mould to the cooker.

  • Steam for about 10 minutes.
  • When done, remove the lid and push the puttu with a long handle that comes along with the puttu maker.
  • Usually the puttu slides out easily without any problems.

  • Delicious Puttu is ready to be devoured with kadala curry or with sugar and banana.
