Potato Stew - Kerala style ishtu

Most of us know that potato stew or ishtu goes well with appam. But have you tried it with idli, dosa or puttu and idiyappam? It is very yummy with all these dishes. From the time I tasted dosa and ishtu combination made by my mom-in-law , I totally fell in love with that and had learnt the recipe from her.That was like around 7 years back :) . From that time, I have been regularly making this ishtu for everything :) . There are different variations in making the stew. What I have given here is one of the easiest way to prepare it. Of course we always want the quickest , easiest , simplest, yet tastiest recipes, right? This recipe falls into that category easily. :)



Ingredients:

Potato - 2
Onion - 1 big
Ginger (cut into small peces) - 1 tablespoon
Green chillies - 2 (slit lengthwise)
salt - as per taste
Coconut Milk - 1 cup
Curry leaves - 2 sprigs
Coconut oil - 1 teaspoon

If using fresh coconut milk, use 3/4 cup of thick coconut milk and half cup of thin coconut milk. I use the boxes/cans available in the stores as fresh coconut milk is almost impossible in the US.

Preparation:

Cut Potatoes into small bite sized pieces.
Slice onion thin and lengthwise.
Add potatoes,onion,green chillies and ginger pieces in a pressure cooker, add some salt and 3/4 cup water and cook it for 3 whistles or until the potatoes are completely done.If desired, few potato pieces can be mashed for thickness. Add the coconut milk and let it come to a boil in simmer. Once it comes to a boil, garnish with some curry leaves and a teaspoon of coconut oil. Yes, thats right. You just have to pour the coconut oil on top :) .
If you don't like the sound of it :), you can heat the coconut oil and fry curry leaves and add it.
Thats all to it. The ishtu is all ready to be devoured with idli/dosa/puttu/idiyappam or even kerala porotta.

You have to try and taste it to believe it :)


Note: If you wish, you can add one carrot and few green beans to it along with potatoes.
