Puliyodharai Recipe

Homemade puliyodharai paste : This is a boon to busy people who wants to cook a homemade meal without much effort when they are tired. I make this paste and store in an airtight container in the refrigerator. This keeps well for few weeks. When ever you want, you just have to mix this in hot rice and delicious puliyodharai is ready.

Ingredients:

Tamarind Paste - 2 heaped teaspoons
If using normal tamarind , use a tennis ball sized.
Red chillies - 6
Chilli Powder - 1 and 1/2 teaspoon
Turmeric Powder - 1 teaspoon
Salt - As per taste
oil - 4 to 5 tablespoons
mustard seeds - 1 teaspoon
Asafoetida powder - 1 teaspoon
Curry leaves - 3 sprigs
channa dal (Kadalai Paruppu) - 1 teaspoon(soak it in water for 15 minutes)
Ginger - 1 inch piece chopped finely

Preparation:
  • Extract the pulp from the tamarind by soaking it in 1 cup of water or dissolve the tamarind paste in 1 cup of water.Keep it aside after adding turmeric powder and chilli powder to it.
  • Add oil in a kadai. Do not think that the oil is too much.It has to be a little on the more side for this recipe.
  • Once it is heated, add mustard seeds to splutter.
  • Break the red chillies into half and add them. Stir it for a few seconds.
  • Add ginger and soaked chana dal.
  • Add curry leaves and asafoetida powder.
  • Stir them well.
  • Now, add the tamarind pulp and add 1 more cup of water.Add required salt.
  • Let it boil for around 10 minutes in medium heat.
  • The sauce has to reduce to half.Stir it once in a while.
  • Once it is reduced, cool it and store it in an airtight container in the refigerator.
  • You can mix this with hot rice and  TA DA !!! Delicious puliyodharai is ready.
You can make the mix and store it and make delicious puliyodharai in a minute. This will be very good with Potato chips / Potato fry or dal vada.

You can optionally add roasted peanuts along with the chana dal. It gives a very good taste to the puliyodharai.
