Banana Dosa / Banana Pancakes




At the end of every week, invariably, there will be a couple of over ripen bananas waiting in the kitchen counter to be acted upon. You can either turn them into some delicious recipes or throw them out. I prefer to take the first option - turning them into banana bread or banana muffins or the most simple banana pancakes.

I want to share the exact steps for making this pancakes/dosa that I was also talking about in the wheat dosa recipe .

This is one of my daughter's favourite breakfast and it is healthy too.You can reduce the maida as much as possible and make it even more healthier.

Ingredients:
Whole wheat lofur - 1 cup
Maida ( All Purpose flour) - 1/2 cup
Over ripen bananas - 2
Sugar - 2 tablespoons (or as per your taste)
cardamom - 2 pods crushed
Milk - 1 cup
water - 1/2 cup ( as needed)

Preparation:
  • Mash the bananas completely using a fork or good old hands :)
  • Add wheat flour, all purpose flour and sugar in a bowl and mix it with the milk. You might have to add water a little more or less than 1/2 cup to make it to a batter. The consistency should be of a idli batter, not too thin.
  • The bananas will be little lumpy in the batter. Do not worry about that.
  • Once you have mixed the batter thoroughly, add the cardamom powder.

  • Mix it once and then pour in the hot griddle and add half a teaspoon of  ghee/oil on the dosa.
  • Once it turns to golden brown, turn it over and cook it. Keep the flame in medium heat.
  • Once both the sides turns golden brown, take it out and serve it hot.
